2 Quick, Easy & Healthy Dessert Recipes

puddingRight now Jen and I are both dialed in strictly with our diets because we have photo and video shoots coming up in the next few months.

That means no sugar, no gluten, no grains other than white rice, no nuts and nut butters, no seeds, no fats other than that from animals and coconut oil/milk and some ghee, and very minimal dairy.

However, we still eat dessert 3-5 nights a week.

When we have to be super strict I make some sort of pudding with coconut milk.

Coconut has incredible healing properties and can you help you lose bodyfat, prevent against cancer, heart disease and diabetes, strengthen the immune system and even improve the quality of your skin and hair.

There have been entire books written about the benefits of coconut oil and I am a strong believer and first hand witness. I live on coconut products and can’t recommend them highly enough.

So here’s what I do…

I put full fat coconut milk in the fridge for at least a few hours so it gets cold and thickens up a bit. Be sure to get BPA free cans. I use boxes of Aroy D as it’s the purest one I’ve found.

Then I pour it in the blender with some frozen berries or cherries. Organic black cherries alone are my favorite but I will mix it up with berries from time to time.

Finally I add a scoop or two of vanilla protein powder. I’ve tried quite a few to get the taste and consistency just right and Biotrust Low Carb is the best for making pudding.

Then I just blast away for a couple minutes and it’s ready to eat.

To mix it up I throw a banana and chocolate protein powder in on other nights.

Now, of course, you have to take into account your daily macros. If you’re supposed to be eating higher carbs and lower fat that day this might not work for you. It depends where your fat intake is at the end of the day.

What I do is purposely set aside an extra 15-25 grams of fat that I don’t eat during the day and save for this dessert at night.

And you have to count the carbs and the fruit as well. I tend to have three servings of fruit per day so I use this as one of them.

I’m a fat kid at heart and I like my dessert a few nights a week. If I were a few weeks out from a photo shoot or in some sort of contest I’d most likely cut this out. But honestly, as long as you hit your macros and are smart about this shouldn’t have any negative impact on most everyone else.

It’s easy, healthy and tastes incredible.

So again it’s:

•    Full fat coconut milk from a BPA free can (I use Aroy D)
•    Biotrust Low Carb Protein
•    Organic frozen berries and/or dark cherries (bananas are optional as well)

If you want to make it low carb, obviously skip the berries and just use the coconut milk and protein.

Throw it all in blender then go to town.
